I’d say it’s about time I shared another recipe. It’s been a while. This is a fairly easy and cheap and –get this– healthy recipe. I know! That word doesn’t usually fit in to my recipes but this is one you won’t even know is healthy. Even the hubs loves it. Kids too.
I use the recipe as is except I’ve learned it is soooo much better grilled than baked. But really isn’t that the case with most recipes. Maybe not cheesecake but everything else. Almost. 😜
1 cup plain yogurt
2 Tbsp olive oil
4 cloves garlic, minced
½ Tbsp dried oregano
1 medium lemon
½ tsp salt freshly cracked pepper
¼ bunch fresh parsley
3½ to 4 lbs chicken pieces
Directions are simple. Mix all the stuff except the chicken together in a bowl. Dump in ziploc bag or big bowl. Toss chicken around in it and refrigerate (overnight is best, but at least a couple of hours). Then gill it until it’s done.
