The Ultimate Chicken Casserole

I’ve been blessed to have many many Chicken Casseroles made by friends and family over the years. Three in particular rank at the top of my list of ‘good foods’. So being the culinary genius that I am (paaahhhh!!!) I combined the three (or four) different elements to create one ULTIMATE CASSEROLE! Bwah-ha-ha!

Okay – to give credit where credit is due – I begin with my mother’s chicken casserole recipe which was always good. I cook the chicken like my sister does. I combine two ingredients like my sister-in-law does. Finally, I make the topping like my good friend Elise. So here you go…

Kelli’s {Terri’s + Jennifer’s + Elise’s} Ultimate Chicken Casserole 

Ingredients:

3-4 boneless skinless chicken breast (cooked in Italian dressing & pulled apart)
16 oz sour cream
1 1/2 sleeves Ritz crackers (crushed)
1 1/2 sticks melted margarine
poppy seeds
Regular can of Cream of Chicken Soup
Regular can of Cream of Mushroom Soup

Directions:

Layer chicken in bottom of casserole dish. Add salt & pepper. Stir together sour cream, and soups. Pour soup mixture over chicken. Mix together Ritz, margarine, and poppy seeds to make topping. Spread over soup mixture. Bake at 350˚ for 30 minutes or until golden & bubbly.
