What’s For Dinner? Buffalo Chicken Pasta Bake

Forgive me Jamie but I couldn’t find your recipe so I found the closest thing I could and went from there. My grocery store runs go something like this, ahem

Drive to our not-so-quaint, yet country grocery store
Grab a buggy.
Head for the meat department.
What’s on sale?
Aha! Chicken breast! I can work with that.
Chicken casserole, check.
What else? That thing Jamie makes with Buffalo sauce and ranch and chicken and noodles… What did she tell me exactly?
Nope, don’t have the RAM for that.
Pull out the handy dandy smart phone.
Wait, do I have a signal here? No.
Is their wifi working? Yes! Wahoo!
Search buffalo, chicken, pasta.
Not that one, who wants whole wheat pasta? Not me.
Next.
You want me to make my own buffalo sauce?
AIN’T NOBODY GOT TIME FOR THAT!

That’s it! Got it.
Here I go back and forth across the store forgetting one thing after another.
{Yeah, I know there’s better ways to do this. Yet every week, this is me. But I don’t recommend it, find someone else’s blog to let you know the correct way to grocery shop. And coupons.}

But it’s sooo worth it when it’s time to bake this meal. It smells DELISH. And Should taste as good. If it’s anything as good as Jamie’s. Here you go.

Buffalo Chicken Pasta Bake

originally from Freezer Meals for Matt

1 16 oz. box Penne pasta, cooked and drained

3 boneless, skinless chicken breasts; cubed and cooked

1/2-1 C. Buffalo Hot Sauce (I used 3/4 cup on a double recipe for my not spicy eating child)

3/4 -1+ C. Ranch dressing (I used 2 cups)

1-2 C. Shredded cheese (Colby Jack or Cheddar)

1. Preheat oven to 350* and prepare a deep baking dish.

2. Mix together hot sauce and ranch.  In separate bowl, mix chicken, pasta and cheese.  Pour sauce over all and mix well.

3. Pour everything into prepared baking dish, sprinkle with cheese (if desired) and bake for 20-25 min.
